One of the most important and widely used culinary ingredients across the world today is Sugar. As of today, an average person consumes about 25 kilograms of sugar each year; 10 kilograms more in industrialized nations. Leading international brands such as Pepsi and Coca-Cola also use ordinary sugar as the primary sweetening agent in their drink.

With the rapid development of science and the global economic status, sugar receives heavy competition from high-fructose corn syrup and artificial sweeteners manufacturers. The other commonly used additives include cyclamate, stevia, aspartame, and sucralose. The advantages of these artificial sweeteners are cost and lack of calories.

Given its impact on history and modern economy, with more than two thousand years of metamorphosing food, sugar has managed to establish itself as the most significant food ingredient even today.
